EILDON RAINBOW TROUT AND ATLANTIC SALMON have a delicate pink/red colour and make superb sushi or sashimi dishes. You have the choice of thinly slicing or cutting miniature slabs of flesh to have raw or marinate in vinegar, lemon juice, white wine, garlic, basil red wine vinegar or just lightly sear the fish before serving. Serve with rice or any combination of fresh garden salad with a dressing, soy sauce for dipping and a touch of wasabi
